We were represented with our extremely promising "FerBeet" project at the Innovation Day for SMEs organized by the Federal Ministry of Economics and Climate Protection (BMWK) in Berlin-Pankow. Under the motto "Digital. Transformative. Resilient." around 300 small and medium-sized enterprises (SMEs) and research institutions presented their new developments and demonstrated the potential that SMEs have to transform into a more sustainable, healthier and more digital society. Our current research project "Vegan cold cuts made from fermented root vegetables (FerBeet)" aims to develop a vegan alternative to traditional raw sausages such as salami and ham. The fermentation of root vegetables and legumes is intended to create a high-quality product that is not only tasty, but also nutritionally valuable. The project is being funded as part of the BMWK's Innovation Competence (INNO-KOM) program, with EuroNorm GmbH as the project sponsor.
